Firin Sutlac is one of Turkeys most popular desserts, always served in restaurants and made at home. It is a light dessert originated in Ottoman cuisine. It’s simple to make and tastes great. Traditionally these are served in clay cups and are best to use if possible.
Ingredients
- 1 lt milk
- 1/2 cup white rice
- 1 cups water
- 1/4 cup corn flour or corn starch
- 1 egg yolk, beaten
- 1 cup white sugar
Method
Step 1
First, wash the rice and boil it with enough water to cover it by about 1/2 inch, until the rice is soft.
Step 2
Put rice, 750 ml. milk, and sugar in a pot and stir on low. Keep stirring for 20-30 minutes more after it starts boiling.
Step 3
Meanwhile, dissolve the starch in 250 ml. milk and add it to the rice pudding. Stir constantly.
Step 4
Lower the heat to medium, and simmer for about 10-15 minutes,
Step 5
Then take a ladle of rice pudding to a bowl and mix it with the egg yolk.
Step 6
Preheat the oven to 350 F (180 C).
Step 7
Pour pudding into small ovenproof bowls with a ladle.
Step 8
Using a spoon, drizzle a small amount of the egg yolk mixture in the center of each oven cup.
Step 9
Bake the pudding cups in a 360° F/180° C oven until the tops are nicely browned and take the bowls out and let them get cold.
Step 10
Enjoy hot, cold or room temperature.
