Turkish Red Lentil Soup is simple to make and is best served with a squeeze of lemon and red pepper flakes. This soup is vegetarian, loaded with veggies, and so comforting. Naturally gluten-free.
Ingredients
- 1 cup red lentil, washed and drained
- 1 onion, chopped
- 1 small carrot, cut in medium pieces
- 1 small potato, cut in medium pieces
- 1 tbsp red tomato paste
- 3 tbsp virgin olive oil
- 1 teaspoons cumin
- 7 cups water
Method
Step 1
Saute the onion with oil 4-5 minutes in a medium sized pot.
Step 2
Add the carrots and potato saute for another 3 minutes.
Step 3
Add the tomato paste and stir it around for around 1 minute.
Step 4
Poor in the hot water.
Step 5
Place red lentil, salt and cumin in a pot.
Step 6
Bring the soup to a boil. Cook for about 20 minutes on medium low heat.
Step 7
After the soup has cooked and the lentils are tender, blend the soup in a blender. If necessary add more hot water.
Step 8
Sauce: Melt the butter in a small pan. Add in the peppers. When it starts bubbling pour over the soup. It’s ready to serve. If you don't want to use butter, you can sprinkle red pepper flakes over the soup.
