Yogurt has a special place in Turkish cuisine. Zucchini and Carrot salad with yogurt is simple but very delicious Turkish meze, incorporating yogurt and sauted zucchinis and carrots. It is quite easy and quick to make and simply delicious. You can serve it as a salad, and also as a dip. Great with bread.

Ingredients

  • 4 medium carrots, grated
  • 3 medium zucchinis
  • 3 cups natural, thick and creamy yogurt (suzme yogurt)
  • 2 garlic cloves, minced
  • 4 tablespoons olive oil
  • Salt to taste
  • 1/2 cup walnuts , chopped
  • Fresh dill, for topping

Method

Step 1

Grate zucchinis in a bowl. Squeeze grated zucchini to release excessive juice.

Step 2

Heat oil in a skillet and add grated carrots. Cook for 3-4 minutes and add zucchini in a skillet. Stir until carrots and zucchinis are wilted and set aside to cool.

Step 3

Mix the yogurt, salt and garlic together until smooth and creamy.

Step 4

Transfer the carrots to a large bowl and when cool, pour the yogurt over. Add chopped walnuts and mix well.

Step 5

Store in the fridge until ready to serve. Enjoy!
