Purslane vegetable has countless benefits for human body. It is the most Omega-3 rich vegetable among the all vegetables. Purslane Salad is wonderful served as an appetizer or salad. It’s also very quick and easy to prepare with only a few ingredients.
- 2 bunches of purslane (3 cups purslane leaves)
- 2 cups plain Turkish strained yogurt
- 3 large garlic crushed
- 1 tbsp. olive oil
- salt and pepper to taste
Cut off the roots of purslane bunces and wash and drain it well.
Separate the leaves from the stems.
In a separate bowl, combine strained yogurt and garlic and adjust the amount of salt to taste. Whisk until smooth and creamy.
Add the purslane leaves to the bowl and mix all together well. Make sure all the leaves are covered with the yogurt mixture.
Transfer into a serving bowl and serve immediately.
