- 1 cup ground almond (almond flour)
- 1 2/3 sugar powder
- 3 egg whites, lightly whisked
- 1tbsp lemon juice
- 1drop of bitter almond flavor (optional)
- Garnish: Almond halves
Place all of your ingredients in a medium sized pot and heat over a medium heat stirring constantly to prevent boiling.
The mixture should be warm but not hot. Do not allow the mixture to reach a boil.
Move the pan away from the heat. Pour lemon juice on a clean heat proof surface.
Pour the dough over the lemon. Spread and collect constantly using a spatula to cool the dough down.
Preheat the oven to (130 c). Transfer to pastry bag.
Pipe mounds onto the baking sheet. Place the almonds on top.
Preheat the oven to 350F (175C). Then turn down to heat to 240F (120C) and put the tray in the oven.
Bake for about 45 minutes without opening the oven door.
Let them cool down before serving traditional Turkish Almond Cookies.
