    Kuru Fasulye! How to make White beans with meat

Turlu is a Turkish vegetable dish.  It is a Turkish mix of vegetables which changes with the seasons. It has so much flavor and texture and color.

Ingredients

  • 1 onion, chopped,
  • 2 potato, cut into cubes,
  • 1 zucchini, cut into cubes
  • 3 eggplant, cut into cubes
  • 1 green pepper, chopped
  • 250g tender green beans, stringed and snapped in half
  • 2 tomatoes, diced,
  • 2 cloves of garlic, grated,
  • 1,5 tbsps tomato paste,
  • 4-5 tbsps vegetable oil
  • Salt to taste,
  • 2 tsps ground red pepper,
  • Hot water

Method

Step 1

Place cubed eggplant in a bowl. Sprinkle the salt and massage it into the eggplant for about 2 minutes. Let excess water drain for about 15 minutes. Meanwhile, prepare the other ingredients.

Step 2

Heat the sunflower oil in a pan and add the chopped onion and garlic, continue cooking till softened.

Step 3

Squeeze eggplant cubes with your hands to remove the bitter juice.

Step 4

Season to taste and add the tomato paste. Cook for a few more minutes.

Step 5

Add the remaining vegetables in layers: potatoes, pepper, green beans, zucchini, eggplants and tomatoes.

Step 6

Pour the water over the vegetables.

Step 7

Put the pot on medium heat and bring to a boil. Simmer over low heat until vegetables are softened, 40 minutes.

Step 8

If necessary, add a little more water during the cooking.

Step 9

Turn off heat and let cool for 20 minutes. Serve with rice and yoghurt.
