Hummus is served as a meze (appetizer) with warm pita bread in Turkish restaurants. It is pretty simple, with just a few extra ingredients.
Ingredients
- 2 cups dried chickpeas (equivalent amount of precooked chickpeas in can)
- 2-3 cloves garlic
- 1/4 cup extra virgin olive oil
- 2/3 cups tahini
- 3-4 tbsp lemon juice
- 1 tsp ground cumin
- Salt to taste
Method
Step 1
Cover chickpeas with water and soak overnight.
Step 2
Drain chickpeas, cover with fresh water and bring to a boil in a large saucepan. Reduce heat, cover and simmer for about 40 minutes or until chick peas are very soft. Drain.
Step 3
Preheat the oven to 400ºF.
Step 4
Put all of the hummus ingredients into the bowl of a food processor and puree.
Step 5
Transfer to an oven-proof dish or casserole.
Step 6
Bake for 10 to 15 minutes and serve hot with pita bread. You can sprinkle red pepper flakes on the top. Enjoy!
