Turkish bulgur salad (kısır) is by far one of the most popular dishes in Turkish cuisine. It is easy, healthy and delicious!

Kisir is a specialty in the southeast of Turkey, from where the country’s spicier dishes hail. Bulgur salad as a meal, side dish or snack. It makes a great picnic food too!

Ingredients

  • 2 cups of fine bulgur
  • 2 cups of boiling water
  • 1 tbsp tomato paste
  • 1 tbsp pepper paste (preferably hot)
  • 1/2 cup olive oil
  • 1/2 bunch green onions, finely chopped
  • 1 small onion, finely chopped
  • 1 bunch parsley, finely chopped
  • 2 tbsp pomegranate syrup
  • 1lemon juice (you have to taste and add less or more lemon juice)
  • 2 tsp red pepper flakes
  • 1 tsp ground black pepper
  • 1 tsp cumin
  • For Garnish: lettuce leaves, tomatoes, cucumber

Method

Step 1

Place the bulgur in a large bowl. Pour the boiling water over it. Cover and let stand for 15-20 minutes to allow the bulgur soften.

Step 2

Meanwhile, In a medium size pot, place the olive oil and onion. Cook and stir until the onion has softened and turned light brown, about 5 minutes.

Step 3

Add the salt, spices, tomato and pepper paste.

Step 4

Drain the bulgur and return it to the bowl. Add the cooked onion.

Step 5

Drizzle with lemon juice, and the pomegranate syrup.

Step 6

Toss gently until the salad is thoroughly combined.

Step 7

When it is cold, add green oninos and parsley. Toss and serve.

Step 8

Kisir is served and eaten with lettuce leaves, cucumbers and tomatoes. Enjoy!
