This tomato soup is thick, rich and creamy and makes a delicious, satisfying lunch.
- 6-7 medium-sized tomatoes
- 2 tbsp of olive oil,
- 2 tbsp of flour
- 1 tbsp of butter
- 5 tbsp cream
- 1 tbsp tomato paste
- 5 cups hot water or vegetable broth
- Salt to taste
Grate the tomatoes.
In a pot heat up the oil, melt the butter and add the flour and stir for 2-3 minutes.
Add tomato paste and cook for 2 minutes.
Add the tomatoes and cook on low heat for 5 minutes.
Add 5 cups of hot water (or stock) and bring to the boil. Simmer uncovered for 10 minutes.
Using an immersion blender, blend until completely smooth.
Add in the cream and let cook for an additional 5 minutes before serving.
Add salt and remove from heat.
You can serve with croutons or grated parmesan. Enjoy!
