Biber Dolması one of the most basic recipes cooked very often in Turkish kitchens. You can also stuff courgettes (zucchini), aubergines (eggplant), or large tomatoes. This is is fantastically versatile, nicely filling and easy to make.

Ingredients

  • 12 green bell peppers
  • 300 grams ground beef
  • 1 cup rice, well rinsed and drained of water
  • 1 onion, chopped finely
  • 1/2 bunch parsley, chopped
  • 1 tbsp tomato paste
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • Salt to taste
  • For the sauce:
  • 1 tbsp tomato paste
  • 1 tbsp. olive oil
  • Hot water

Method

Step 1

Wash your peppers and cut the tops off, take out any seeds and put your peppers aside for later.

Step 2

Put the ground meat in a large bowl and stir in the rest of the filling ingredients. Season and knead, until all blended well. The filling is ready.

Step 3

Stuff the peppers with this filling until they are about ¾ full.

Step 4

Cover the tops with a slice of tomato. (optional)

Step 5

Place the peppers in a broad pot facing up.

Step 6

Mix tomato paste with water and olive oil, pour into the pot.

Step 7

Then pour a couple of cups of water around the stuffed vegetables, until it covers just about the half of vegetables.

Step 8

Bring to a gentle boil and cook until most of the water has evaporated, and the peppers are tender - about 30-40 minutes.

Step 9

Serve warm. Garnish with plain yogurt. Enjoy!
