Irmik Helvasi, Semolina halva is one of the most well known desserts in Turkey. Helva is made for all important life events, to commemorate births, deaths, marriages, circumcisions etc. in Turkey. It’s a soft, comforting dessert made with simple ingredients.

Ingredients

  • 3cups semolina (irmik)
  • 2,5 cups sugar
  • 4 cups milk
  • 3 tbsp pine nuts
  • 150g. butter
  • 4 tbsp oil

Method

Step 1

Place oil in a large saucepan. Add the pine nuts and Cook for 2 minutes.

Step 2

Add semolina. Stir with a wooden spoon for few minutes on low heat.

Step 3

Add butter, cook over a medium heat, stirring all the time, until lightly browned and the pine nuts darken.

Step 4

In the same time, heat the milk and sugar in a small saucepan mix well and stir until the sugar is dissolved.

Step 5

When the milk is hot, remove from heat.

Step 6

Pour the milk & sugar mixture into semolina & pine nuts mixture and lover the heat.

Step 7

Cover the saucepan and cook on low heat until the milk mixture is totaly soaked into the semolina.

Step 8

Turn the heat off. Place a paper towel over the pan and cover with the lid, let the helva rest for about 10 minutes.

Step 9

Get a small bowl, put inside some semolina, press slightly. Put the bowls upside down on individuals plates.

Step 10

Warm halva is delicious alone or with a scoop of vanilla ice cream. Enjoy!
