Ingredients
- 2 cup red lentils
- 4,5 cups water
- 1 cup Turkish bulgur (small grain, washed and dried)
- 1 onion (finely chopped)
- ½ cup olive oil
- 1 tbsp tomato paste
- 1 tbsp red pepper paste (if you cannot find red pepper paste you can use 2 tbsp tomato paste)
- ½ bunch parsley, finely choped
- ½ bunch green onion, finely choped
- 1 tsp red pepper
- 1 tsp cumin
- 2 tsp salt
- 1 lemon juice
- Curly leaf lettuce
Method
Step 1
Cook the red lentils with water at low heat.
Step 2
Make sure that lentils are soft. When there is a small amount of water left, add the bulgur.
Step 3
Turn the heat off and close the lid.
Step 4
Leave for at least 10 minutes to make bulgur absorb all the water and expand.
Step 5
In another medium size pot, saute the onion with olive oil.
Step 6
And then stir in tomato and red pepper paste. Saute for 2 minutes and add salt and all spices.
Step 7
Transfer to the pot with bulgur and red lentils.
Step 8
Add lemon juice and mix all of them. If it is cooled enough stir in green onions and parsley. Mix all well.
Step 9
Take walnut size pieces and give them kofte shape in your hands
Step 10
Keep a little bowl of water close by to wet your hand frequently during this process since the kofte mixture will get stuck on your hands.
Step 11
Serve them on a wide serving tray with lettuce leaves by the side to wrap.
