The pide, also called Turkish pizza, is a soft flat bread filled usually with meat. You can make vegetarian version with mushroom or cheese.
Ingredients
- For the dough:
- 2,5 cups flour + more for kneading
- 1/2 cup warm water
- 1/2 cup warm milk
- 2 tsp dried yeast
- 2 tsp salt
- 1 tbsp sugar
- For the topping
- 400 grams beef mince
- 2 peeled and diced tomato
- 1 medium onion, finely chopped
- Handful, chopped parsley (optional)
- 2 green pepper, finely chopped
- 1 tbsp olive oil
- Salt, black pepper
Method
Step 1
First, make the dough. Warm the water and milk.
Step 2
Add yeast,salt and sugar into the warm milk and water mixture in a bowl. Dissolve the yeast in mixture, mixing with your fingers.
Step 3
Add flour, mix together until all the ingredients are well blended, then knead the dough for about 4-5 minutes.
Step 4
Put the dough back in the bowl and cover with a towel. Leave it in a warm place for around 1 hour.
Step 5
Meanwhile mix all topping ingredients together in a large bowl.
Step 6
Preheat oven at 200C/400F.
Step 7
Cut the dough into equal chunks and knead each of them well. Use your hands to flatten and then use a roller give a long oval shape each one.
Step 8
Spread your desired filling on top of the pide, and crimp the edges up 1-2 centimetres,
Step 9
Brush the sides and edges with olive oil, then bake for 20-25 minutes, until the pides are golden brown. Serve with ayran. Enjoy!
