Haluj is a famous Circassian dumpling dish which is filled with pureed potatoes. Every Turkish family with Circassian roots has a recipe for it. It is called with many names and most commonly referred to as Psihalive, Mantaz or Hinkal.

Ingredients

  • 600g all purpose flour
  • 1 tsp salt
  • 1 egg (optional)
  • 1 cup of warm water
  • 6 medium size potatoes
  • 2 tbsp olive oil
  • 1tsp tomato paste
  • 1 onion (optional)
  • Salt, black pepper
  • For sauce; 2 tbsp butter
  • 1tbsp tomato paste
  • 3 tbsp water

Method

Step 1

Combine the flour and salt in a mixing bowl. Add the egg and water, mixing well with your hands.

Step 2

Add more flour if your dough is too sticky and soft, but be careful not to add too much as your dough will get dry and tough.

Step 3

Cover and set aside for at least 30 minutes.

Step 4

Bring a large saucepan of water to the boil and add your potatoes. Boil your potatoes for around 15 minutes.

Step 5

Peel and grate the potatoes.

Step 6

Heat two tablespoons of olive oil in a pan. Add 1 tsp tomato paste.

Step 7

Add grated potatoes in a pan. Saute well.

Step 8

Add salt and pepper, set aside to cool.

Step 9

Take out your dough, and put it on a clean floured surface. At this point, it should be nice and soft, but not sticky. Cut the dough in four pieces.

Step 10

With a rolling pin, roll out the dough. Keep flouring so your dough doesn’t stick.

Step 11

After you have rolled out your dough, take a longdrink glass and cut out as much rounds as you can.

Step 12

Take the cooled down potato mash, and with a teaspoon, fill the middles of the dough rounds with the mixture.

Step 13

Close the dumplings, make sure you press the sides properly.

Step 14

Put the uncooked dumplings on a cloth so they don’t stick.

Step 15

For cooking, boil the water in a large pot and add salt.

Step 16

Boil your dumplings in seperate batches, with about 10-15 dumplings per batch. When the dumplings start to float, leave them cooking for another 30 seconds, then take them out.

Step 17

Meanwhile prepare the sauce. In a small pan, melt butter and stir in tomato paste and some water. Cook for 2-3 minutes over low heat.

Step 18

Serve the dumplings on a plate and drizzle the tomato sauce on top. If desired sprinkle chili pepper over it. Enjoy!
