This is such an easy, delicious and healthy vegetarian recipe that you can serve as a starter or an accompaniment to meat. The beans are best eaten at room temperature or cold, so allow at least half an hour for the beans to cool once cooked. Once cooked, you can store in the fridge for a good 2-3 days.

Ingredients

  • 500 gr. green beans ( cut in half lenghtways )
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 5 tbsp olive oil
  • Salt to taste
  • 1 tsp sugar (optional)
  • 100 ml water

Method

Step 1

In a pot, heat olive oil and saute onions until translucent.

Step 2

Add tomatoes and cook for another 5 minutes.

Step 3

Stir in beans and season with sugar and salt.

Step 4

Pour in hot water, turn down the heat and simmer for about 20 minutes. Check the seasoning and add more water and salt if needed.

Step 5

Transfer beans to a serving dish. Serve cold.
