You should try this recipe in summer time for lunch or light dinner. It is low cost, low calorie and easy to make, with few ingredients, also gluten-free.

Ingredients

  • 500gr. green beans, cut in medium sized chunks
  • 3-4 eggs, lightly beaten
  • 3 tbsp butter
  • 1 tbsp oil
  • Black pepper to taste
  • Salt to taste

Method

Step 1

Boil the beans in salty water for about 20 minutes, until they get soft, drain.

Step 2

Saute green beans with olive oil and butter for about 8-10 minutes at medium heat. Stir occasionally, don't let them burn.

Step 3

Pour in the eggs, stir gently and cook until the eggs are cooked. Add salt and pepper. Turn the heat off.

Step 4

Serve immediately with bread. They are both good to go at lunch, as a side dish or a light dinner. Enjoy!
