Notes:
Eggs are easier to separate when they are cold.
Make sure the bowl you use to beat the egg whites in is 100% clean and void of any water, oils, or residue.
When forming the nests and making the indentations, be gentle.
Ingredients
- 4 eggs
- salt, to taste
- pepper, to taste
Method
Step 1
Preheat the oven to 350 degrees, line a roasting pan, or baking sheet.
Step 2
Separate eggs, placing egg whites into large bowl and each yolk into a small bowl.
Step 3
Make sure there are no little pieces of egg yolk in the whites or you will have difficulty getting the whites to beat properly.
Step 4
Using electric mixer, beat eggs whites and salt until stiff peaks form.
Step 5
Dollop 4 large spoonfuls of the egg whites onto the prepared baking sheet and make a small well in the middle of each with the back of a spoon.
Step 6
Bake for 2 to 4 minutes.
Step 7
Gently pour 1 yolk into the well of each white.
Step 8
Bake until yolks are cooked, about 4 minutes more.
