Cigkofte ( Çiğköfte) is a special kofte in the south and southeast of Turkey. The ingredients are simple; bulgur, a special hot spice called isot and ground raw meat with no fat, tendons and sinews.
You ‘cook’ raw meat by kneading with isot, which is a special one made in south of Turkey. Isot is like a blackish paprik, so the color of cig kofte shows its quality. If it has a dark color, it means that the best isot is in it.
Cig kofte is a type of Turkish meatball traditionally made with meat, but sometimes it is made with meat free, using only wheat for substance.
Ingredients
- 500 gr. Ground beef (ground 3 times)
- 750 gr. Fine bulgur
- 2 medium onions (finely chopped)
- 3 cloves garlic (grated)
- 5 tbsp isot (hot pepper)
- 2 tomatoes (grated)
- 2 tbsp tomato paste
- 1 tbsp pepper paste
- ¼ cup oil
- 2-3 tbsp salt
- 1-2 tbsp cumin
- ½ cup chopped parsley
- 6 fresh green onions, finely chopped
Method
Step 1
Place chopped onions, garlics and tomato in a large bowl.
Step 2
Add meat and start kneading for two minutes. Then slowly add the bulgur and oil and knead.
Step 3
Add pepper paste, tomato paste, salt, isot and cumin. Deep your hands in cold water occasionally to ease the process. Weigh down and knead them very well all together for about 45 minutes.

Take a small piece, give it a cylinder shape with your palms, squeeze and leave finger marks on it. Place green salad leaves on a service plate. Arrange the çiğ köfte on them. Serve with lemon wedges. Enjoy!
