Bulgur Pilaf is an easy flavorful recipe that you can eat as an entree or side dish. You can find bulgur pilaf in almost all restaurants. Kebabs are often served with a side salad and bulgur pilaf.
- 1 cup coarse bulgur, large grain, washed and dried
- 2 cups hot chicken broth or 2 cups hot water
- 1 medium onion, chopped
- 1 medium tomato, peeled and diced
- 1 green pepper, chopped
- 1 tbsp tomato paste
- 2 tbsp butter
- 2 tbsp vegetable oil
- 1 tsp salt
Saute the onion with butter and oil for about 2-3 minutes in a medium sized pot.
Add the tomato, green pepper, tomato paste, saute for about 2 minutes.
After a while add bulgur and saute for about 2-3 minutes.
Add hot chicken broth and salt and stir. Cook on low heat.
Close the lid and simmer untill the bulgur absorbs all the water
Before serving stir well with a wooden spoon. Serve bulgur pilaf with ayran or cacik.
